Summer Personal Lunch Board

Eating and living with intention means taking the everyday things we do and elevating them. One of our favorite ways to do that is with a seasonal personal lunch board.

You’ve heard of girl dinner, but have you heard of girl lunch? Us either—but we’re here for it. Our personal lunch boards are an easy way to make lunch a little more fun and enjoyable. This board takes about 10 minutes including chopping the veggies—and it’s worth every minute.

We’ve all been there, right? We’re working from home or busy around the house on the weekend when we realize we haven’t eaten in a while. So, we head to the kitchen and pull out another boring lunch.

Our summer personal lunch board is sourced with a variety of seasonal veggies and fruit along with gluten-free crackers, hummus, meat and cheese. Why seasonal? Because it tastes better when the veggies are locally-sourced and in season. And, veggies need to taste good, right?

Let’s cover the basics of pulling together a personal lunch board.

First things first: your board. Unfortunately the board we used was sold out but we found a similar one here. Of course, you don’t have to buy anything new. A small salad plate or other small board will work perfectly. Arranging the ingredients is what makes it extra special.

Below you’ll find the ingredients we used for our board as a starting place:

  • Genoa salami

  • Habanero cheese

  • Cucumbers, cherry tomatoes and celery from our summer garden

  • Mediterranean hummus

  • Top Seedz Gluten Free Crackers

  • Blueberries from the farmer’s market

Easily make it your own with these suggestions:

  • In season veggies: peppers, broccoli, cauliflower, carrots

  • In season fruit: stone fruit such as cherries + peaches, blackberries, melon

  • Add nuts and seeds

  • Swap hummus for a dairy-based veggie dip

Pro-tip Make sure you have a variety of veggies, fruits, protein, carbs and fat to meet your daily dietary needs. It helps keep you satiated longer and your energy higher.
